Get Baked with Annette: Blondies with 1:1 Canna Oil

We're back with Anentte and this month she's sharing her recipe for blondies!  These deliciously decadent Blondies cover all the bases. Crisp White Chocolate Chip and Skor Bits Cookie base layered with Salted Caramel Sauce, Skor Bits, Golden Oreo Cookies and finished with a dense gooey Blondie sprinkled with more Skor Bits! Throw a scoop of Vanilla Ice Cream with more Salted Caramel Sauce on top and you’re in heaven…

INGREDIENTS

White Chocolate Chip Cookie Crust

¾ cup butter, room temperature*(reduce to 5 ounces and add 30 ml of the 1:1Canna Oil)

½ cup sugar

½ cup brown sugar

1 tsp vanilla extract

1½ cups flour ¼ tsp kosher salt

1 cup mini white chocolate chips plus

¼ cup Skor bits

Salted Caramel Sauce (to skip this step you can always buy salted Caramel Sauce)

1 cup sugar

1/3 cup butter (melted)

½ cup heavy cream (warm)

1 tsp sea salt

Layers

24 Blonde Oreo cookies

1 cup Skor bits

Blondies

¾ cup butter, melted

¾ cup sugar

¾ cup brown sugar

2 eggs

2 tsp vanilla extract

1 ½ cups flour

½ tsp baking powder

¼ tsp kosher salt

DIRECTIONS 1

1) Preheat oven to 350°F. Line the bottom and sides of a 13x9-inch baking pan with parchment paper - make sure you overlap the parchment so you can easily remove the blondies from the pan. For the white chocolate chip cookie crust, using an electric mixer, on medium speed cream butter, sugar and brown sugar until well combined. Add vanilla extract. On low speed, add the flour, salt and mini white chocolate chips/skor bits. Mix just until combined. Press evenly into the bottom of the prepared pan.

2) For the caramel sauce, in a medium, heavy bottomed saucepan add sugar over medium heat. Once the sugar starts to melt, stir until it is completely melted. Once melted, stop stirring and allow the sugar to cook to a deep amber, caramel color. Immediately add the butter and whisk until it is incorporated. Remove from heat and slowly stir in the cream and return to the stove for 1 minute, remove and add sea salt, stir until blended. Pour into a glass bowl and allow to cool slightly. Drizzle a generous ½ cup caramel sauce over chocolate chip cookie crust, sprinkle ½ cup Skor bits over caramel. Place Oreos over top of caramel and Skor bits.

3) To prepare the blondie batter, in a large bowl whisk melted butter, sugar and brown sugar until combined. Add eggs and vanilla and continue to whisk until smooth. Add flour, baking powder and salt. Stir just until the flour has disappeared. Spread batter over Oreos and top with remaining ½ cup Skor bits. Bake for 30-35 minutes or until golden and a toothpick comes clear with a little crumb. Remove from the oven and let cool completely. Once cool, refrigerate for 1 hour or overnight for easier cutting.
